Domaine du Pavillon is one of Albert Bichot’s six domaines, located in the commune of Pommard in the Côte de Beaune in Burgundy. The estate dates back to the 18th Century and all the vineyards here follow a Certfied Organic philosophy to help protect the natural soils of the area. Both white wine from Chardonnay and red wine from Pinot Noir are produced here in the new and improved winery which is equipped to process grapes in a gravity-fed system. The Domaine du Pavillon label produces Village, Premier Cru and Grand Cru level wines with the latter showing great concentration and complexity. Pavillon also exclusively owns the “Clos des Maréchaudes”, a tiny vineyard which is classified as both a Premier Cru and a Grand Cru, which is completely unique to the Côte de Beaune and is therefore highly sought after and collectable.
